Corn cane wood - can it be carved?

I carve walking sticks by hand with an exacto knife. I went to the local nusery for cuts of branches and found 2 heavy fair length corn cane trunks. I'm wondering how far down is the woody part, how to cure it dry, and whether or not it can be carved at all. It would be unbelievably strong if it could be done...anyone know?

Just to clarify further, this is a corn *cane*, not the slender stalk variety, this is more tree like and is *not* fruit bearing. They're meant for decorative plants, not for growing food. It's the size of a sapling, 2 1/2 to 4 " wide.

The wood will break down in about 6 months to a year! I'm not sure if you can cure it. I'm thinking varnishing it might be the best to get the longest lasting harding effect!
